Ode to the Avocado

How I love thee. Versatile fruit, delicious blended or sliced, plain or salted, in a dish or the dish itself.  Avocados pack a nutrient punch…

Rich in minerals and vitamin B6, avocados are an easy snack to slice up and scoop for high energy.  Packed with mono-unsaturated fats they protect the heart and lower the cholesterol.  And yes, they even increase that libido <wink>

With a record crop reported this year avocados will be abundant. So here’s some easy quick ways to enjoy it:

Easiest (and my most favorite)

Sliced, scooped and lightly salted

If you’re like me I was completely at a loss as to how to cut an avocado, before I was done I’d have green mush on my hands, a pit rolling off the table and a tiny sliver to try and enjoy.

  • Simply add a little pinch of salt to the avocado (for an even healthier snack leave the salt off).

Still pretty easy, an oldie but goodie:

Guacamole

  • 2 ripe avocados
  • 1 small onion
  • 1 clove garlic
  • 1 small tomato
  • 1 1/2 Tbsp lime juice (or juice of 1 fresh lime)
  • salt and pepper to taste

Peel avocados and remove the pit
Peel and mince the onion and the garlic
Chop the tomato.
Mash the avocado in a bowl (fun for the kids) or keep in chunks and then stir in the remaining ingredients.
Serve cold with tortillas
