What is a Berkshire Pig?

We just ordered a berkshire pig for a roast next week. We went through Riverview Farms and the experience, thus far, has been great.

They slaughter one day and have it to you the next.

Unlike most of the pork you buy in the store, Berkshire pigs are fed with only certified organic corn, vegetables, fruits, and grass.  They are raised without the use of added hormones or antibiotics.

A recipe for a brine for the pig:

You will need to scale this recipe up to be sure the brine covers the entire pig.

2-1/2 gallons cold water
3 cups kosher salt
1-1/2 cups sugar
2 bay leaves, torn into pieces
1 bunch fresh thyme, or 4 tablespoons dried
1 whole head of garlic, peeled
5 whole cloves
1 tsp cayenne pepper
5 whole allspice berries, crushed
4 juniper berries, crushed

    Do you ship your meat? Uncle needs info ok overnight shipping of smoked meats.
